Papain is a thiol protease, which can hydrolyze the carboxyl terminus of arginine and lysine in proteins and polypeptides, and can preferentially hydrolyze those amino acids with two carboxyl groups at the N-terminus of peptide bonds or the peptide bonds of aromatic L-amino acids.
