What is Gluconolactone(Glucono Lactone)?

Uses of Glucolactone


1. Used as tofu coagulant


Used as a protein coagulant to produce tofu.


2. As milk gelling agent


Mainly used in the production of yogurt or cheese, the gel strength of milk formed by acidification with GDL is about twice that of the fermented type.


3. As a quality improver

4. As an acidifying agent
