What is the cocoa powder?


Cocoa powder is the cocoa bean (seed) taken from the pods (fruit) of the cocoa tree, and the cocoa bean fragments (commonly known as cocoa cake) obtained by fermentation, coarse crushing, peeling and other processes. Powder is cocoa powder.


What are the types of cocoa powder


Natural cocoa powder is a light brown cocoa powder produced from cocoa beans without adding any additives during the process of cocoa powder processing; while alkalized cocoa powder is made by adding edible alkali during the processing of cocoa beans to adjust the pH value. At the same time, the color of cocoa powder is also deepened, and the aroma is much stronger than that of natural cocoa powder.


The pH value of natural cocoa powder is generally between 5.0 and 5.8; the pH value of alkalized cocoa powder is generally between 6.2 and 7.5.


Cocoa powder is divided into high-fat cocoa powder, medium-fat cocoa powder, and low-fat cocoa powder according to the content of cocoa butter.


Cocoa butter, despite its high saturated fat content, does not raise blood cholesterol like other saturated fats. This is because it has a high stearic acid content. Stearic acid, one of the main fatty acids in cocoa butter, can lower blood cholesterol.
