Vitamin B2, also known as riboflavin, is one of the B vitamins, slightly soluble in water, and stable when heated in neutral or acidic solutions. It is a component of the prosthetic group of yellow enzymes in the body (yellow enzymes play the role of hydrogen transfer in biological redox). When it is lacking, it will affect the biological oxidation of the body and cause metabolic obstacles.
The storage of vitamin B2 in the body is very limited, so it must be provided by the diet every day. Two properties of vitamin B2 are responsible for its loss:
(1) Can be destroyed by light;
(2) It can be destroyed by heating in alkaline solution.
Most dietary vitamin B2 is present in the form of flavin mononucleotide (FMN) and flavin adenine dinucleotide (FAD) coenzymes bound to proteins. After entering the stomach, under the action of gastric acid, it is separated from protein, converted into free vitamin B2 in the upper digestive tract, and absorbed in the upper part of the small intestine.
