Gardenia yellow powder is a natural yellow pigment extracted from the mature fruit of Gardenia jasminoides, a plant in the Rubiaceae family. Its main components are carotenoids Crocin and Crocetin.

 

It has a wide pH range (4-11) and its color is more vibrant in a weakly alkaline environment; it has good heat resistance (stable at 80℃), but strong acids, iron ions and ultraviolet light may cause it to fade or turn brown.
