Black tea theaflavins are a golden yellow natural pigment found in black tea, formed by the oxidation and polymerization of catechins during the fermentation process of tea leaves.

 

Natural Source:

• Black tea fermentation product: Theaflavins are unique to black tea and are found in very low concentrations in unfermented teas like green tea and white tea.
• Formation: The withering, rolling, and fermentation steps in black tea production trigger enzymatic oxidation of tea polyphenols in the leaves into theaflavins.
• Content Range: 0.5%-2.5% of the dry weight of black tea, with process optimization potentially increasing this to 2.6%.
