What is maltose powder?
Maltose powder is a powder made from maltose. It is a disaccharide composed of two glucose molecules connected by an α-1,4 glycosidic bond. It is made from starch such as rice and wheat hydrolyzed by enzymes in malt.
Its sweetness is about 30-50% of sucrose, it has a mild taste and is easily soluble in water. It is a natural sweetener, but its sweetness is low and more dosage is required to achieve a sweetness similar to sucrose.
Unlike other artificial sweeteners, maltose can be converted into glucose in the body to provide energy, but its glycemic index is higher.
